Round Steak
Meatballs or Meatloaf


Round Steak

  1. Select two, 1/2 inch thick Round Steaks (or enough to feed your family twice.)
  2. Trim fat.
  3. NOTE: Use a large electric skillet or a cooking bag.
  4. To tenderize the meat, pound it on both sides with a meat mallet.
  5. HINT: Browning meat prior to slow cooking adds flavor. If using the cooking bag, skip the browning or brown in a heavy skillet prior to putting meat in the bag.

    Add 2 tablespoons vegetable oil to the skillet. Heat the electric skillet to the SEAR setting. Sear the meat ON BOTH SIDES just until brown, watch carefully to not burn the meat. When brown on each side, reduce the heat to 200 (just below BOIL).
  6. While the meat sears, prepare the vegetables and spices.
    — Two large yellow onions, quartered
    — 1 cup sliced celery and celery leaves
    — 1 tablespoon diced fresh or canned garlic
    — salt and pepper to taste. (Try 1/4 teaspoon red pepper flakes)
  7. When skillet temperature has been lowered to BOIL, or below a bit, turn the meat over to loosen the meat from the pan.
  8. Add 1 to 2 cans SWANSONS beef broth depending on how much meat you have and how much gravy you will use. (Keep the temperature low to prevent the broth from boiling over.)
  9. Add prepared vegies and seasonings.
  10. Cover and simmer at least 4 hours.
  11. Add carrots 1 hour before serving.
  12. Serve meat with a cole slaw salad and mashed red potatoes.
  13. Save all pan drippings.
  14. Make gravy with cornstarch mixed in water per box directions.

Freezer-Fresh Meatballs or Meatloaf

2 lbs. hamburger 80% no-fat
1 lb. JIMMY DEAN sausage HOT style
1/2 cup bread crumbs
2 eggs
1/2 cup milk
1/2 cup quick Oatmeal

Mix above ingredients with your hands until well mixed, then add the following ingredients to your personal taste.

One large onion chopped or grated fine
Garlic fresh or canned
At least 1/2 cup Tomato sauce OR tomato ketchup OR V8 juice
Add 1/2 teaspoon dry mustard
Add 1/4 teaspoon red pepper flakes
Add 1 teaspoon salt

Mix until well blended. Meat should be moist but should cling together.

Heat oven to 350 degrees. Use two non-stick cookie sheets OR one cookie sheet and one meat loaf pan OR two large meat loaf pans. Use a large-size cookie scoop to form meatballs. Drop rounds or meat onto cookie sheet so that sides do not touch.

Bake in heated oven for 45 minutes, then test for doneness by opening a meatball from the center of the pan. If any pink shows, bake another 5 to 10 minutes.

Watch that meatballs placed on pan edges don't over cook.

Cool, loosen from pan, let cool completely, then divide into meals. Freeze in heavy freezer bags for meals now or in a month or so.

Serving suggestions:

Make spaghetti sauce and serve with heated meatballs
Make Goulash
Make a mock Stroganoff
