Easy Chicken
Chicken and Dumplings

Chicken Breasts for two to eight people

Easy Chicken

I bought two roasted chickens from the Deli, served one hot with a green salad and hot bread, and used the LEFTOVERS for three more quick meals. I cook for two, so adjust my recipes for your family size.

Strip all usable chicken from bones of both chickens and divide into quantities that will serve your family. Freeze any meat that won't be used in a couple days. Even cooked chicken will spoil in the refrigerator. I boiled the bones with vegies for an hour to retrieve every scrap of meat and strained the broth for adding taste to recipes. Save large pieces of breast for salad or sandwiches. Use a medium to large cooking pot.

First leftover meal could be Chicken and Dumplings.


Chicken and Dumplings

Chicken pieces to serve four
4 cups broth (Your own or Swansons "Natural Goodness-100% fat free broth)
3 garlic cloves chopped or a teaspoon of bottled minced garlic

Heat chicken, broth, and garlic to boiling point

Add 1/2 to 1 cup carrots cut to coin size for color and vitamins.
Add 2 tablespoons chopped green pepper.

HINT: When you cover the pot for the last ten minutes, lower the heat to keep the food from sticking.

Let simmer, covered, 10 minutes then bring to a boil to add dumplings. Follow the recipe for mixing and cooking dumplings on the BISQUICK or LOW FAT BISQUICK box .

Serve with an apple salad and vegie sticks.

If you have more leftover chicken, make a Celery Chicken casserole or a Special Chicken Soup.

Chicken Breasts for two to eight people

Purchase one bag frozen chicken breasts (usually "with rib meat") with eight or more pieces. Thaw in refrigerator.

HINT: Kitchen scissors can be used to clip off fat

Remove as much fat as possible, check for and remove any rib bones. Use a REYNOLDS OVEN BAG, large size. Open the bag and place it in an oblong cake pan about 11 1/2 by 15 size.

Pour 4 oz of canned chicken broth in the bag.
Add to the broth two teaspoons basil (wet or dry)
1 teaspoon minced garlic (fresh or canned)
1/2 teaspoon salt
1/4 teaspoon ground red pepper or a few red pepper flakes

Shake bag to mix the broth and spices. Sprinkle the chicken breast generously with Wyler's Shakers (chicken garlic and herb flavor).

HINT: With any chicken piece, no pink meat should be visible, cut a piece open to see if pink inside. If pink is seen, cook for another 15 minutes and check again.

Arrange the breasts in a double layer in the bag and close the bag with the nylon tie provided. Make four small cuts on top of bag to let steam escape. Bake for one hour in a 400 degree oven. Use a temperature fork to test for doneness.

SAVE ALL JUICES TO USE IN LEFTOVERS RECIPES.

LEFTOVER MEALS could include Chicken and Cheese macaroni with red peppers and broccoli, or Chicken A La King over biscuits, or Chicken Stir Fry, or Spicy Chicken salad.
